Box Bakes: Veganuary Meringue Kisses

With Valentine's Day on the way, there's no better time to get creative in the kitchen and treat your nearest and dearest to something sweet. A tasty and effective bake are meringue kisses- a batch of these is sure to go down well, and the splash of pink and red makes them perfect for the occasion! These melt-in-the-mouth sweet treats only require a bit of patience and the most minimal amount of ingredients. Being Veganuary, we also wanted to make them plant-based of course!

Today we'll be using the same Kenwood Mixer from our previous post, switching the KBeater adjustment for the balloon whisk. As eggs are out the window for this recipe, it requires a lot of whisking to really achieve the same consistency needed in non-vegan recipes! The key to this recipe is aquafaba (aka liquid from a can of chickpeas!), which will act as our 'egg' replacement. Practise definitely makes perfect when it comes to these, so we started off by finding the perfect vegan recipe from Lazy Cat Kitchen and made our own little adjustments from tips we found online.

Tips for the perfect vegan meringues:

  • Try to make each meringue the same size, too large and they may end up baking at different rates.
  • No touching the oven door once they're in! 
  • Adding a little Cream of Tartar helps stiffen the peaks and gives a nice finish.
  • Leave for the time specified in the oven once finished, turning the heat off and with the oven door slightly open. This helps them dry correctly.

What You'll Need:

  • Stand mixer or electric hand whisk.
  • Mixing bowl.
  • Baking tray lined with baking paper.
  • Large and small spoon.
  • Piping bag (optional).


  • 120 ml aquafaba
  • ½ tsp red wine vinegar
  • 125g caster sugar
  • 1/2 tsp Cream of Tartar (optional- this just helps peaks to stiffen and adds glossiness)
  • 1 tsp vanilla extract (optional- you can also try out different flavours, or leave out completely)
  • Gel food colouring


  1. Line your baking tray with fresh baking paper.
  2. Preheat your oven to 110c.
  3. If using a piping bag, prepare it by adding a thin line of gel food colouring down one edge.
  4. In your stand mixer (or in a large bowl using your hand mixer), beat the aquafaba until stiff peaks are formed. You will know when they are done when you can lift the bowl over your head (literally!) and the mixture doesn't slide in the bowl.
    1. With the KMix Stand Mixer, we used the number 6 speed setting.
  5. Slowly add in the caster sugar, mixing continuously while you pour it in.
  6. Keep whisking until glossy and peaks are firm.
  7. Add in the Cream of Tartar and vanilla extract, whisking again for another 30 seconds to combine.
  8. Using a large spoon, fill your piping bag with the mixture. If you don't have a piping bag, a small spoon is fine to shape them by hand.
  9. Slowly pipe onto the baking tray, creating a 'blob', pulling up quickly to create the peak. If using a spoon, spoon a small amount of mixture and use the back of the spoon to create the peak on top.
  10. Bake for 70 minutes. After the 70 minutes, leave your meringues in the oven with the heat turned off for 50 minutes.
  11. Enjoy!
